Creamy avocado, tangy feta, and bright tomatoes combine with crisp kale in this fresh salad.

Serves 4

  • 2 tablespoons orange juice
  • 1/4 cup olive oil
  • 1/4 teaspoon shallot, diced
  • 1/4 teaspoon garlic, diced
  • 2 teaspoon dill, minced
  • 1/4 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 bunch of kale or package of baby kale
  • 1 cup cherry tomatoes, halved
  • 1 avocado, cubed
  • 1/4 cup feta cheese

In a medium bowl, whisk together orange juice, olive oil, shallot, garlic, dill, Dijon, and salt and pepper until emulsified. In a large bowl, pour dressing over kale. Massage with hands for 1-2 minutes. Let stand 10-15 minutes. Toss in remaining ingredients.
