Put those fresh summer tomatoes to good use with this delicious sandwich.

  • 4 whole-wheat rolls
  • 4 tbsp. prepared basil pesto
  • 8 oz. fresh mozzarella cheese, sliced
  • 1 small package fresh basil
  • 12 tomato slices

Preheat broiler to high.

On half of each roll, spread 1 tbsp. pesto and top with basil leaves and 2 oz. mozzarella. Broil until cheese melts and starts to brown (about 5 minutes).

Place three tomato slices on other half of roll. Put halves together and serve warm. Serves 4.
