Here’s something green, healthy, and delicious to add to your St. Patty’s Day dinner.

Serves 4

 

  • 1 lb. fresh green beans, washed, trimmed, and halved
  • 1/4 tsp. sea salt, plus more for salting water
  • 2 tbsp. unsalted butter
  • 1/4 c. sliced or slivered almonds
  • 1/2 lemon (optional)

Heat 2 inches of water in a 12-inch frying pan and bring to a boil. Sprinkle some salt in the water and add the beans. Cook until just tender, about 10 minutes. Drain and set aside.

In a smaller frying pan, heat butter over medium heat until bubbly. Add almonds. Stir gently for a few minutes, until golden.

Toss almonds with green beans and 1/4 tsp. salt. Sprinkle with lemon juice, if desired.
