Filled with whole grains, fiber, and fruit, this healthy granola can be enjoyed for breakfast or a snack.

  • 4 c. oats
  • ¼ c. ground flax
  • ½ c. sliced almonds
  • ¾ c. shredded unsweetened coconut
  • 2 tsp. cinnamon
  • ½ tsp. salt (optional)
  • ½ c. honey
  • ¼ c. brown sugar
  • 2 tbsp. butter
  • 2 tsp. vanilla extract
  • 2 tbsp. water
  • 1½ c. dried fruit (such as apricots, cranberries, cherries, or blueberries)
  1. Preheat oven to 350° F.
  2. In a large mixing bowl, combine oats, ground flax seeds, almonds, coconut, cinnamon, and salt (if desired). Set aside.
  3. In a small saucepan, combine honey, brown sugar, butter, vanilla, and water. Cook over medium heat until butter is melted and sugar dissolves. Pour over oat mixture and mix well to combine.
  4. Spread oat mixture onto a baking sheet lined with parchment paper. Bake 25 minutes, turning mixture over with a spatula after 10 minutes to ensure even browning.
  5. Remove from oven and sprinkle with dried fruit. Gently turn with a spatula and return to oven for an additional 5 minutes. Let cool, then transfer to an airtight container. Granola will keep several weeks.
  6. Serve with low-fat milk or low-fat yogurt, or eat plain as a snack. Makes about 6 cups.
