Makes 1/2 cup

  • 1/3 cup extra-virgin olive oil
  • 1 1/2 tablespoons cranberry sauce
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon honey
  • 1/2 teaspoon fresh thyme
  • 1/8 teaspoon salt
  • 1 pinch freshly ground black pepper

In a small bowl, add all the ingredients and whisk until well blended. Taste with greens you will be serving the dressing with and adjust salt, pepper, and sweetness as desired.
